넨세보 Nensebo는 남쪽의 베일 산 Bale Mountain과 접하고 있는
웨스트 아르시 West Arsi 지역의 새로운 커피 재배 지역입니다.
커피농장들은 쉐이딩 트리 shading tree로
가짜 바나나 나무 False banana를 키웁니다.
길쭉하고 넓은 잎들은 그늘과 적절한 빛을 제공하고
큰 비로부터 커피를 보호하기도 합니다.

에티오피아 소규모 커피 농가들은 자체 가공 시설이 없기 때문에
지역별로 있는 워싱스테이션이라고 부르는 도정소를 이용합니다.
넨세보의 중심에 위치한 레피사 워싱 스테이션에서는
2070미터 고지대인 레피사 Refisa, 로리초 Roricho, 불가 Bulga,
솔레나 Solena 에서 소농 588명이 재배한 커피를 가공합니다.

10월 말에서 1월 초 수확기에
잘 익은 커피 체리를 손으로 따서 워싱 스테이션으로 가져오는데,
에티오피아 고유품종과 지역 품종 쿠르미가 혼합되어 있습니다.
물에 뜨거나 결함 있는 체리를 골라내고 씻은 다음
다섯 시간 동안 물에 담그고, 72시간 동안 발효한 뒤,
9일 ~ 11일 동안 돋움건조대에서
최종 수분이 10.5%가 될 때까지 말립니다.

웨스트 아르시 West Arsi 지역의 커피는
그동안 시다마 Sidama로 판매되었지만
올해부터는 이 지역의 커피가
얼마나 독특하고 차별화된 가치가 있는지
보여줄 수 있게 되었습니다.

In the case that the recipient refuses to receive the parcel, the order will be returned to Korea and will not be re-shipped.
