잘 익은 핑크 버본 체리를 물에 담가 잎이나 나뭇가지 같은 이물질을 제거한 뒤, 수작업으로 다시 골라내고 물을 사용하지 않고 과육을 벗겨낸 다음, 깨끗한 물을 넣은 밀봉한 탱크에서 24시간 발효한다. 이 커피를 물에 씻고 헹구어 물 없이 다시 24시간 동안 발효시킨 뒤 물에 다시 한번 씻는다. 이 부분이 트로피칼 프레시 커피의 핵심이다.

건조 과정도 특별하다. 그늘을 여러 겹 만들어 25일에서 35일에 걸쳐 수분함량이 10 – 11%가 될 때까지 아주 천천히 말린다. 이는 워시드 커피에서는 보기 드문 매우 오랜 건조 기간이다. 이 커피에서 느낄 수 있는 꽃향기와 파넬라 (panela: 사탕수수 즙을 졸여 나오는 비정제 원당 덩어리) 같은 진득하고 강한 단맛이 이런 과정에서 나오는 것이다.

호세는 그가 생산하는 커피에 과일이나 인공 향료를 첨가하지 않는다. 대신 발효와 건조 과정을 통제하여 다양한 맛을 이끌어낸다. 좋은 커피는 커피 체리가 가진 단맛이 미생물과 반응하며 커피가 가진 고유한 맛이 나오기 때문이다. 이런 생산 방식은 소비자들이 특별한 맛을 찾는 시장에서 지속해 나가기 쉽지 않지만, 다양한 가공법을 개발해 다양하고 특별한 커피를 만들어낸 것은 그가 이룬 큰 성과이다.
