먼저 24시간 동안 산소가 있는 상태로 발효시킨다. 그리고 나서 전체 체리를 그레인프로백에 담아 CO2를 주입하고 22도 이하로 50시간 동안 유지한다. 마지막으로 체리를 돋음 건조대에 펼쳐놓고 35도 미만의 온도를 유지하면서 이상적인 수분함량에 도달할 때까지 골고루 말린다.

칠리 버본 품종은 희귀 돌연변이로 Huila의 Acevedo에서 발견되었다.



Jairo Arcila
하이로 아르실라는 킨디오Quindio의 3세대 커피 농부다. Luz Helena Salazar와 결혼하여 두 자녀 - Carlos와 Felipe Arcila - 를 두었으며 이들과 코피넷을 공동 설립했다. 하이로의 첫 직장은 콜롬비아에서 두 번째로 큰 커피 수출 업체였고 2019년 은퇴할 때까지 40년 이상 Mill Manager로 일했다.

1987년 첫 번째 커피 농장인 La Esmeralda를 구입하여, 처음으로 카투라를 심었다. 이후로 커피 농사를 병행하며 풀타임으로 일해서 서서히 농장을 여섯개 - Villarazo, Mazatlan, Santa Monica, Maracay, Buenos Aires - 로 늘려나갔다. 이제 그는 지역 경제를 활성화하는 일자리를 제공할 수 있다.

커피 농사를 시작하고 첫 8년은 상업용 커피를 재배했으나 코피넷 설립을 계획하면서 스페셜티 커피를 생산하기 시작했다. 하이로는 아들들에게 커피를 분류하고 가공하는 데 대한 큰 통찰력과 전문지식을 얻었고, 이는 지역의 프로파일을 바탕으로 환상적인 커피를 선보이는 데 큰 영감을 주었다.
